Granola Girl

Do you own a pair of Birkenstocks? Do you enjoy a nice hike? Do you have a Hydroflask? If you answered yes to any of these questions, you can be a granola girl too.
I recently found myself spending $9 on a bag of “Paleonola” classic granola (my absolute favorite store-bought granola of all time) at Whole Foods, and figured I should just try to make my own.
After researching some classic granola recipes here & here, I ended up loosely basing my final recipe from the Healthy Granola Recipe off of the blog, Cookie + Kate. The cool thing about granola is you can add just about anything to make it your own. Feel free to add dried cherries, cashews, chocolate chips, coconut, or pumpkin seeds. Get creative!
Walnut & Golden Raisin Granola Recipe
4 cups rolled oats
1 cup chopped pecans
1/2 cup chopped walnuts
1 cup golden raisins
1 teaspoon sea salt
1 teaspoon cinnamon
1/2 cup maple syrup
1/2 cup coconut oil
1 teaspoon vanilla
Preheat oven to 350. Mix everything in a large bowl (except the raisins!) and spread on a baking sheet. Bake for 12 minutes and stir with a spatula. Bake for another 12 minutes until golden brown. Let the granola cool off completely before sprinkling on the raisins.
