Vanilla Spice Collagen Protein Balls

I am not a huge pumpkin gal, but have been craving fall flavors as the weather has cooled down. I used to have protein balls on hand all the time and want to get back in the habit of having them made for the week as an easy go-to snack. Not only are they filling, but they also can satisfy your sweet tooth (which I tend to need following any meal).

Vanilla Spice Collagen Protein Balls

Ingredients

3/4 cup creamy peanut butter

1 1/4 cups almond flour

3 tablespoons Vanilla Collagen Protein Powder (I use Primal Kitchen)

1 1/2 teaspoons cinnamon

3/4 teaspoon ginger

1/4 teaspoon salt

1/2 teaspoon cinnamon for topping (optional)

2 tablespoons sugar for topping (optional)

Directions

  • Mix all ingredients together (other than for the topping) in a large mixing bowl

  • Refrigerate for 30 minutes

  • If the dough feels too soft add additional almond flour as needed

  • Roll into balls

  • Mix the cinnamon and sugar for the topping in a separate bowl

  • Coat each with the cinnamon sugar mixture

  • Store in the freezer
