Healthy Peanut Butter Cups

I inevitably need something sweet RIGHT after lunch… approximately 2 minutes after I’m done eating. I love chocolate & peanut butter - and these mini peanut butter cups remind me of the Trader Joe’s cups! They are only 3 ingredients, and they stay good in the fridge for up to 2 weeks. (Reese’s Cups have emulsifiers, preservatives, and citric acid. No need for any of that junk when these are so easy to make!)


Healthy Peanut Butter Cups

1 cup dark chocolate chips

2 Tablespoons peanut butter 

2 Tablespoons maple syrup

 

Arrange 15 mini muffin cups on a plate or cookie sheet. I use these.

Melt the dark chocolate until smooth in the microwave using 30 second intervals, and then stirring each time. 

In a separate bowl, mix the peanut butter and maple syrup to make the filling. 

Drop about 1 teaspoon of melted chocolate into each muffin cup. Drop about 1 teaspoon of peanut butter mixture into each muffin cup. Top off with another teaspoon of melted chocolate.

Carefully smooth off the top with a spoon. You can sprinkle flaky sea salt on top for an added layer of flavor!

Freeze for 30 minutes, then you can move these to the fridge. Enjoy.

Feel free to swap the peanut butter for almond butter or the dark chocolate for milk chocolate.
